Low Carb Mini Cauliflower Pizzas

The most delicious, low carb, keto, gluten free pizza recipe that is quick and easy to make! These snacking cauliflower pizzas are the perfect high protein snack, and perfect for any pizza craving!

Ingredients
  

  • cups cauliflower or broccoli (900g)
  • ½ cup smooth cottage cheese OR cream cheese (113g)
  • cups grated cheese of choice ( mozzarella, cheddar, parmesan are some of my favourites) (75g)
  • 1 egg (43g)
  • 1 tbsp psyllium husk (18g)
  • Pinch of salt & pepper

For the topping:

  • 1 tsp crushed tomatoes (5g)
  • tsp mozzarella or cheese of choice (3,5g)

Instructions
 

  • Preheat your oven to 180 degrees celisus.
  • Place your cauliflower and/or broccoli florets in a high speed food processor and pulse until it forms a rice like texture ( you may need to scrape down the sides in between pulses)
  • Place your pulsed cauliflower in a microwave safe bowl and cover with a plate. Microwave for 5 minutes until the cauliflower is cooked through ( you could also steam this if preferred!)
  • Allow to cool. Once cool enough, place inside a cheesecloth and drain excess water.
  • Add all ingredients and mix well until it forms a dough.
  • Line a muffin tin with oil spray and /or muffin cups. Place 1 tbsp dough inside and press down forming a pizza base. Place 1 tsp crushed tomato over, and a 5g sprinkle of cheese on each pizza. Top with extra spices , oregano and (optional) additional toppings
  • Bake in the oven for 15 minutes until cheese has melted and base has gone crispy.
