The most delicious low carb, cheesy, spicy cauliflower nachos! Enjoy as is or add some tortilla chips! This one-pan dinner recipe is quick and easy

Ingredients
  

  • 1 large cauliflower floret 840g
  • ½ cup grated mozzarella cheese 129g
  • ¼ diced red onion 40g
  • 1 cup spicy salsa 250ml
  • ¼ cup low fat smooth cottage cheese 56g
  • 1 jalapeno
  • 1 tbsp cajun spice

Instructions
 

  • Preheat oven to 180 degrees celsius. Line a large baking sheet with baking paper.
  • Slice your cauliflower into slices. Spray with your oil spray and top with your cajun spice.
  • Bake for 30-45 minutes until crispy.
  • Once cooked and crispy top with your grated cheese, slice jalapeños & spicy salsa. bake for a further 5-10 minutes until cheese has melted.
  • Top with your red onion, coriander and cottage cheese. Enjoy!
