5 Minute Protein Cheesecake In a Mug

The ultimate quick and easy protein cheesecake in a mug! This is perfect for if you’re looking for a recipe that will take you no more than 5 minutes (from start to end) and want a ‘baked’ cheesecake recipe! It could be made in the oven (which takes a drop longer but makes it a fluffier texture) or in your microwave. Packed with protein, this is the perfect sweet snack!

Ingredients
  

  • 1 cup Low fat smooth cottage cheese OR cream cheese (250g)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 2-4 tbsp powdered granulated sweetener of choice Depends on how sweet you like it!
  • 1 egg

Instructions
 

  • Line a ramekin or mug with non stick spray.
  • Combine all ingredients in your mug/ramekin.

In the microwave

  • Microwave at 30 second intervals ( to make sure cheesecake mixture doesn't bubble over for 3-4 minutes. Cheesecake should still have a slight jiggle in the middle
  • Take out and allow to cool. Eat immediately (if you like it warm) or place in fridge to firm up.

In an Oven

  • Bake at 180°C for 15-20 minutes until slightly golden at the top and jiggly on the inside.
  • Take out and allow to cool. Eat immediately (if you like it warm) or place in fridge to firm up.
