Instructions
In a high speed blender or food processor blend the desiccated coconut and coconut oil until it forms a smooth texture. You may need to scrape down the sides with a spatula as needed. Depending on your equipment the time it takes will vary, but you are looking for a smooth nut butter consistency
Once done, add all other ingredients except for chocolate chips/ any other toppings. Combine well in the food processor OR you can mix in a bowl with a wooden spoon.
Once mixture has formed, stir in chocolate chips/ any other toppings
Transfer mixture to a lined brownie tin/ loaf pan. Add toppings on-top
Place in the freezer to allow it to firm up!
Once firm, slice into squares and store into an airtight container in the freezer
Notes
Calories may vary according to brands used. I used pure maple syrup, 1/4 cup chocolate chips and 100% pure peanut butter, and pea protein isolate.
