There is nothing better than waking up to the smell of freshly baked banana oatmeal muffins. The crumbly texture, the hints of cinnamon & the sweet taste coming naturally from bananas. There is just one issue…….baking the muffins in the morning takes waaaaay too long and no one has time for that! This is the perfect recipe for if you have a banana oatmeal muffin craving and want to whip it up in 2 minutes!
I made this for Mik as a quick snack, and he really enjoyed eating it with his afternoon tea! I strongly recommend if you’re a banana muffin lover, to give this recipe a shot!

Now let me just share with you, Mik absolutely hates oatmeal. While I adore oatmeal and could eat it every single day, Mik has never liked it and finds the texture to be too mushy! He was always jealous of my easy breakfast option when I would make stove top oats, and would try so hard to eat and enjoy it! When I made this mug cake ( using the same ingredients as my morning bowl of oatmeal) he was absolutely shocked at the result! He said it tasted like banana cake and that the oats had a great texture! Highly recommend this recipe if you’re someone who is a little sceptical of oatmeal. It’s a game changer!

Microwavable mug cake
If you don’t have an oven this recipe is designed to be made in either an oven or a microwave! It only takes 1-2 minutes to make in the oven and you’ll be left with this delicious oatmeal banana muffin! I wish I knew about this recipe when I was in college! I remember being in a dorm where we only had a microwave. Back then, I would eat junk because I felt like I had limited options! This is a great healthy recipe that involves no equipment, fuss free and tastes absolutely heavenly.
How do you make the red velvet cupcake mug cake?
Ingredients:
Oat flour: I make my own by blending oats in a high speed blender to make a flour consistency.
Oats: You can use instant oats or rolled oats
Granulated sweetener of choice: I used a calorie free monk fruit sweetener, but any granulated sugar could work.
Baking powder:Essential to get your mug cake to rise
Egg : feel free to replace it with a chia egg if you’re vegan
Banana : Make sure its mashed with a fork!
Method:

Grease a microwave safe bowl or mug of choice with some oil spray
2.
Add all ingredients above and mix well.
3.
Microwave for 1-2 minutes, in 30 second intervals to prevent the mug cake from rising over.

- 1 tbsp oats
- 1/2 banana (Mashed)
- ½ tsp baking powder
- 1 tsp nut butter or oil of choice
- 1-2 tsp granulated sweetener of choice
- Sprinkle of cinnamon
Microwavable mug cake
Grease a microwave safe bowl or mug of choice with some oil spray
Add all ingredients above and mix well.

Oven mug cake
Preheat the oven to 180C/350F. Grease an oven proof bowl or mug of choice with some oil spray
