Did you know I tried nachos for the first time ever 5 years ago? Yeah, you heard me correctly! And maaaan, was I in love with them!
They were so perfectly crispy, cheesy, and I just loved all the salsa. My only issue was, I could easily wolf down an entire plate but then after would feel extremely bloated and sluggish! Since my cauliflower mini pizzas were such a hit last time, I decided to use cauliflower yet again but this time in nacho form! Now don’t get me wrong, I LOVE nachos made with corn chips, something that is delicious is adding some actual corn chips to the cauliflower nachos. This way you get the best of both & extra veggies and less bloating!
Either way, With or without the extra corn chips this recipe is SO delicious and so quick and easy!

This is my go to lazy dinner night! I’ll sometimes pair it with protein like black beans, chicken or serve it as is. Mik LOVES this recipe and always asks me to make extra so that he can take it to work!
I am all for not having to clean up, and ALL you need for this recipe is a sheet pan, and you’re good to go! No fancy techniques or tactics!
Volume Eating Food
Like I always say, If you find tortilla chip nachos MORE SATISFYING- then go for it ! Like I said, I LOVE BOTH, but these cauliflower nachos honest hit the spot and add extra volume. I often feel like a bit of both and will have some cauliflower nachos with some tortilla chips! Either way, it is the best way to add volume, and is SO DELICIOUS.

How to make the Cauliflower Nachos:
Step 1: Prepare your cauliflower
Slice your caulfilower into florets. Spray some oil spray, add your spices and sea salt. Bake at 180 degrees celisus until cooked through and cripsy (around 30-40 minutes)
Step 2: Add your toppings
Once your cauliflower is cooked, add your cheese, salsa, jalapenos & any extras! Bake again for an additional 5-10 minutes until cheese has melted.
Step 3: Top with some garnish
Top with some finely diced red onion, smooth low fat cottage cheese & some chopped herbs and spices (I like coriander!)
Serving Suggestions:
Eat immediately! Best served when hot and cheese is all melty, but if you don’t mind the cheese hardening you can enjoy it in your lunchbox!

Line a large baking sheet with baking paper. Slice your cauliflower into slices. Spray with your oil spray and top with your cajun spice. Bake for 30-45 minutes until crispy. Once cooked and crispy top with your grated cheese, slice jalapeños & spicy salsa. bake for a further 5-10 minutes until cheese has melted. Top with your red onion, coriander and cottage cheese.
