Soft Baked Cookie Bars

- 1 cup oat flour
- 1,5 cup peanut butter
- 1 tsp baking soda
- 1 tsp pure vanilla extract
- 1 egg
- 1/2 + 2 tbsp granulated sugar of choice (i used coconut sugar)
- 1 Tablespoon instant coffee dissolved in 4 tablespoons of hot water
- Optional: 1/4-1/2 cup chocolate chips
ALMOND CHOC
- Add1/4 cup crushed almonds
COCONUT
- Top with 1/4 cup desiccated coconut
CHOC CRANBERRY
- Add1/4 cup dried cranberries
WALNUT
- Add 1/4 cup chopped
- walnuts
SALTED CARAMEL
- After baking top with salted caramel made with
- 4 Tbsp coconut oil
- 6 tbsp maple syrup or honey
- 2 tbsp granulated sugar of choice
- pinch of salt
- On a low heat (heat up all ingredients until comes to boil and thickens. Take off heat and pour over squares)
- Line a brownie pan and preheat oven to 180 degrees celsius
- Combine all ingredients above in a bowl. place batter in line brownie tin, bake for 10-12 mins, until slightly underdone
- Cut into squares and enjoy!
