Soft Baked Cookie Bars

1 Serving (without choc chips): 127 Calories | 3.7g Fat | 21.1g Carbs | 3.1g Protein

1 Serving (with choc chips): 138 Calories | 4.3g Fat | 22.4g Carbs | 3.3g Protein

  • 1 cup oat flour
  • 1,5 cup peanut butter
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1 egg
  • 1/2 + 2 tbsp granulated sugar of choice (i used coconut sugar)
  • 1 Tablespoon instant coffee dissolved in 4 tablespoons of hot water
  • Optional: 1/4-1/2 cup chocolate chips

ALMOND CHOC

  • Add1/4 cup crushed almonds

COCONUT

  • Top with 1/4 cup desiccated coconut

CHOC CRANBERRY

  • Add1/4 cup dried cranberries

WALNUT

  • Add 1/4 cup chopped
  • walnuts

SALTED CARAMEL

  • After baking top with salted caramel made with
  • 4 Tbsp coconut oil
  • 6 tbsp maple syrup or honey
  • 2 tbsp granulated sugar of choice
  • pinch of salt
  • On a low heat (heat up all ingredients until comes to boil and thickens. Take off heat and pour over squares)
  1. Line a brownie pan and preheat oven to 180 degrees celsius
  2. Combine all ingredients above in a bowl. place batter in line brownie tin, bake for 10-12 mins, until slightly underdone
  3. Cut into squares and enjoy!
  4. Best stored in an airtight container to preserve freshness
