Ingredients
  

  • 255 g fat free plain yoghurt 1 cup
  • 40 g cocoa powder 1/3 cup
  • 1 egg & 3 egg whites
  • 60 g chocolate pea protein powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla
  • 1/2 tsp cinnamon
  • Optional BUT STRONGLY RECOMMEND:1/4 cup chocolate chips
  • 2 Tbsp monk fruit sweetener OR stevia to taste NB especially if your protein powder is not sweetened! Mine is so i could omit these ingredients( for nutritional info below)
  • Optional: 2+ tbsp honey if you don’t want to use stevia, i personally prefer honey to stevia! It only brings it to about 42 calories per muffin

PISTACHIO (around 49 calories)

  • – Add chocolate chips
  • – Top each muffin with 1 crushed pistachio

DOUBLE CHOC (around 45 calories)

  • -Add chocolate chips

TOASTED COCONUT (around 46 calories)

  • -Add chocolate chips
  • -Top each muffin with a sprinkle of coconut

ALMOND (around 49 calories)

  • -Add chocolate chips
  • – Top each muffin with 1/2 almond

CASHEW (around 50 calories)

  • -Add chocolate chips
  • -Top each muffin with 1/2 a cashew

Instructions
 

  • Line a muffin tin with muffin cups and spray with non stick spray. Preheat oven to 180 degrees celsius
  • Combine all ingredients above and mix until it forms a dough
  • Place 1 TBSP of the mixture into the muffin cups. It should make around 21 muffins
  • Top with desired toppings and bake in oven for 10 mins until the muffin has risen and is just cooked through (careful not to burn it)
  • Take out, allow to cool & cover. The muffin tends to sweeten as it cools and tastes much better the next day
  • Store in an airtight container in fridge or freezer!
