Breakfast Granola

Nothing better than crunchy decadent granola clusters! Here are 6 refined sugar free; and whole-grain recipes!

MACAROON GRAIN FREE GRANOLA:

  • 1,5 cups ground nuts of choice ( i used almond)
  • 1/2 cup dessicated coconut
  • 1/4 cup cocoa nibs
  • 1/4 cup sunflower seeds
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3 Tbsp Honey OR pure maple syrup
  • 1 Tbsp nut butter of choice

BANANA BREAD (NUT FREE)

  • 1 cup rolled oats
  • 1 cup instant oats
  • 2 bananas (blended in a high speed blender to form a liquid)
  • 3 Tbsp honey
  • 1 Tbsp oil of choice (i used avocado)
  • 1-2 tsp of cinnamon
  • 1 tsp vanilla extract
  • pinch of salt

PEANUT BUTTER CRUMBLE:

  • 1.5 cups rolled oats
  • 0.5 cup instant oats
  • 1/2 cup peanut butter
  • 1/4 + 2 Tbsp honey OR pure maple syrup
  • 1/4 cup chocolate chips (to be added in after granola has been baked)
  • 1 tsp vanilla extract

DOUBLE CHOCOLATE

  • 1.5 cups rolled oats
  • 3/4 cup oat flour (made by blending instant oats OR rolled oats in a high speed blender)
  • 1 egg + 2 egg whites whisked together
  • 3 Tbsp nut butter of choice
  • 2 Tbsp cocoa powder
  • 1/4 cup chocolate chips (to be added after granola has been baked)
  • 3-4 Tbsp honey OR pure maple syrup

APPLE PIE

  • 1 cup rolled oats
  • 1 cup instant oats
  • 3 apples (blended in a high speed blender to form a liquid)
  • 3 Tbsp honey OR pure maple syrup
  • 1 Tbsp nut butter of choice
  • 1-2 tsp of cinnamon
  • 1 tsp vanilla extract
  • OPTIONAL:1/4 cup raisons
  • pinch of salt
  • *optional chopped apple to be added in in the last 5 mins of baking granola so it doesn’t burn
  1. Preheat the oven to 140 degrees Celsius.
  2. You may want to heat the nut butter and honey/maple syrup (if the recipe calls for it) on the stove top in a small saucepan over a medium heat until it starts to bubble. Take off heat and pour into the rest of the recipe.
  3. Mix dry ingredients with wet ingredients in a large mixing bowl (leaving out chocolate chips if using).
  4. Spread the granola mixture evenly on a lined oven tray. Bake for roughly 12-15 mins until edges start to brown. Take out oven and mix granola with a spoon. Place back into oven and bake until golden brown and toasted.
  5. Remove from oven and allow to cool completely. Once cooled, break into granola clusters OR crumble and stir in chocolate chips
*Store in an airtight container to preserve freshness
**Take note to watch the granola as it burns very quickly.
