With fall in full swing, and the recent release of my ‘you can beat your cravings’ guide. I have been so immersed in work that I haven’t stopped. Thank goodness Mik is always there to help me get creative when it comes to making new recipes! As I have mentioned before, I am a total oatmeal lover and can basically eat oatmeal every single day for breakfast! Mik on the other hand, struggles to palate it and finds the texture to be too soft and gooey. Bless his soul because he always tries to like it. Even when I make him the most elaborate oatmeal bowls, a few bites in and he gives it straight back to me!

We all know that I developed my healthy cookie cereal for this exact reason! Made from the same ingredients from my morning oatmeal bowl, but in mini oatmeal cookie cereal form!

This recipe was a new experiment that is a little less labour intensive than the cookie cereals (making tiny cookies take too much time in the morning!) . I made my morning oatmeal ( as is) and placed it in the oven to get crispy and gooey! Let’s just say the result was this amazing delicious soft baked giant oatmeal cookie! Mik now asks me to make him this dish every morning, and finishes it without fail!

Chocolate Chip Baked Oatmeal

There is nothing better than an oatmeal chocolate chip cookie. This bowl of baked oatmeal honestly tastes like it could be a skillet cookie of some kind. It is crispy on the outside and gooey on the inside with some delicious slightly melted chocolate chips. I have always had a sweet tooth preference when it comes to breakfast, and will usually have sweet over savoury where I can!

I am the kind of person that HAS to eat breakfast, otherwise I find myself getting all shaky, lightheaded and anxious. Let’s just say that my mornings are often jam packed with things to do, and I do not have time to be sitting there making fancy elaborate breakfasts! What I love about this recipe is you just have to throw everything in a bowl, and then bake it in the oven (in that same bowl!).

Full All Morning

This baked oatmeal is my go-to breakfast, especially on days where I know that I won’t have much time to eat! Packed with fiber & healthy fats this keeps me full for the whole morning! Looking for an added protein kick? Add a dollop of greek yoghurt (i like vanilla flavoured) and it tastes like some sort of a cookies & cream creation! This baked oatmeal is made with high fiber oats, zero refined added sugars, wholesome nut butter and some creamy chocolate chips.

Recipe for baked oatmeal  

                                                                               Ingredients:

Uncooked oatmeal: Rolled or instant oats are best!

Nut butter: you can use any nut or seed butter of choice. My favourite is peanut butter!

Granulated sweetener of choice: I used a calorie free monk fruit sweetener, but any granulated sugar could work.

Baking powder: Essential to get your mug cake to rise

Chocolate chips: For that chocolate chip baked oatmeal feel

Method:

 Mix all ingredients in a oven-proof bowl

5 Baked Oatmeal Varieties

 Give these baked oatmeal varities a try!

Cinnamon: add some extra cinnamon to your batter

Cranberry choc: Add some dried cranberries on-ttop of your mug cake

Double trouble:Add some white chocolate chips to your mix

Nutella:Add some crushed hazelnuts and use hazelnut butter as your nut butter of choice

Bounty: Top with some dessicated coconut

  • ½ cup dry oatmeal ((40g))
  • 1 tbsp nut butter of choice
  • 1 tbsp granulated sweetener of choice
  • 2 tsp chocolate chips
  • ½ cup water
  • ½ tsp baking powder
  1. Preheat the oven to 180 degrees celisus.

  2. Mix all ingredients in an oven proof baking bowl

  3. Bake in oven for 10-12 minuted until the top is nice and golden.

  4. Remove from oven and enjoy immediately!
