Warm, sticky and packed with cinnamon! This has to be one of the quickest ways to make a cinnamon bun! Taking the legendary 2 ingredient dough, this recipe makes 2 servings of a cinnamon bun! Perfect for if you’re looking for a sweet treat that doesn’t require loads of kneading rising and all that!

Cinnamon Bun

A couple years ago, I was not a cinnamon type of person! Yes, I still can’t believe it either, but over the years my taste for the spice started to refined a lot more and I found myself reaching for it more and more. I remember the first time ever that I tried a cinnamon bun. It was at Cinnabon, and I remember being hugely disappointed at the outcome! I found it tasted extremely sweet, oily and overall concluded that cinnamon buns just weren’t for me!

But then… a couple years later I tried one at a christmas market and oh my, was my mind blown.

A fluffy dough, with hints of vanilla, sugar and cinnamon had my mouth singing. Sticky, sweet, and filled with cinnamon- I knew I had to create something similar!

Single Serving Cinnamon Bun

Light, Fluffy and so easy to make! This honestly, is the ultimate single (almost) serving cinnamon bun. The best part is that this 2 serving recipe not only allows you to make a delicious cinnamon bun, but without the yeast and the effort! Using the famous two ingredient dough, these come out fluffy and so delicious!

Can The Cinnamon Bun Be Made In The Microwave

I do not recommend making this in the microwave! The dough gets its delicious texture from being baked in the oven until golden brown. Having it in the microwave will result in a chewy texture and a pale colour! You can however, bake it in the air fryer! This will result in that perfectly golden caramelised colour that we are looking for!

Microwavable mug cake

This mug cake recipe is perfect for if you’re looking to make a mug cake without an oven! All you have to do is cook the mug cake in the microwave for 60 seconds and you’ll be left with the best fudgy apple pie! If making a mug cake in the microwave is not for you, you can easily use your oven and bake it instead!

Cinnamon Bun mug cake recipe

                                                                               Ingredients:

Self raising spelt flour: I make my own by taking 1 cup spelt flour and mixing it with 2 tsp baking powder and a pinch of salt. You could use normal self raising flour if you prefer

Yoghurt: I use plain greek yoghurt.

Granulated sweetener of choice: I use golden monk fruit, but you could use any granulated sweetener such as brown sugar, coconut sugar, erythritol etc.

Dash of cinnamon: The Essential ingredient

Milk of choice: I use almond but you could use any milk of choice

Method:

1.

 In a mixing bowl or clean surface, mix your self raising flour with your yoghurt until it forms a ball. Dust a surface with flour and using a rolling pin, roll out the dough into a large rectangle.Using a cooking brush, brush the milk of choice over the surface of the dough. Sprinkle your sweetener and cinnamon over your milk brushed dough.

2.

Roll dough around filling, forming a large log. Slice the log in half and place inside a oven proof mug or oven proof ramekin

Bake, and top with an optional glaze!

5 Cinnamon Bun Flavors

 

Coconut: Add a sprinkle of desiccated coconut over your cinnamon bun
Chocolate chip :Add 1 teaspoon chocolate chips of choice
Frosted:Make your optional frosting
Sprinkles:Add some sprinkles of choice on top
Yoghurt: Top with some yoghurt of choice

Cinnamon Bun in A Mug

The most delicious sweet & sticky cinnamon buns that are perfect for if you just want a quick serving! This recipe makes 2 servings, and is a quick and easy recipe with hints of cinnamon and sweetness

  • 5 tbsp self raising spelt flour (or flour of choice)
  • 3-4 tbsp yoghurt of choice
  • 2 tsp granulated sweetener of choice
  • 1 tsp cinnamon
  • 1 tsp milk of choice

Optional frosting

  • 2 tsp granulated sweetener of choice
  • 1 tsp water
  1. Preheat the oven to 180C/350F. Line 2 oven proof mugs with oil spray.

  2. In a large mixing bowl mix your yoghurt and flour. Start with 3 tbsp yoghurt and add the extra spoon only if you need it. Use your hands to mix and form a dough.

  3. Transfer the dough to a floured surface and combine well. If dough is too sticky to roll, slowly add a little more flour until firm enough to roll.

  4. Using a rolling pin, roll out the dough into a rectangle like shape.

  5. Using a cooking brush, brush milk of choice over the surface of the dough. Sprinkle the rest of your granulated sweetener & cinnamon evenly over your milk brushed dough.

  6. Roll dough around filling, forming a large log. Slice the log in half and place inside prepared mugs.

  7. Lightly brush the top with additional almond milk

  8. Bake in the oven for 7-12 minutes until golden brown

For Optional Frosting

  1. Blend sweetener in a high speed blender to form a powder

  2. Mix with water until it makes an icing

  3. Drizzle 1 tsp onto each mug cake.
