Healthy Chewy Soft-Baked Cookies

For those who want to sink their teeth in a chewy soft baked cookie

Now i know i have another soft-baked cookie, for those of you who are unfamiliar you can find the recipe here. But here is my latest recipe, which involves more of a chewy-soft baked feel that is absolutely delectable.

1 Serving: 102 Calories | 6.1g Fat | 9.4g Carbs | 1.6g Protein

  • 1 cup almond flour
  • 1 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut sugar OR brown sugar
  • 1/4 cup xylitol
  • 6 Tbsp melted butter OR oil of choice
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1/3 cup chocolate chips
  • pinch of salt

DOUBLE TROUBLE

  • – Use a mixture of milk and dark chocolate chips!

TOASTED SESAME

  • – Sprinkle cookies with 1/4 cup sesame seeds before baking

CHEWY CARAMEL

  • -Add 1/4 cup chopped & pitted dates

CHOC ROASTED ALMOND

  • – Add 1/4 cup crushed roasted almonds OR any nut of choice

DARK CHOCOLATE

  • Recipe as is! Using dark chocolate chips
  • Nutritional facts for ‘base’ recipe can be found below
  1. Preheat oven to 180 degrees celsius. Line and grease a roasting tray.
  2. (OPTIONAL)In a saucepan melt butter over medium heat, and begin whisking. Stir as it bubbles for roughly 2 mins until butter begins to brown.Take off heat and set aside. ( be sure to watch this carefully as it can easily burn). You can skip this step by just adding normal melted butter/oil, but it honestly tastes soo delicious if you do this step!
  3. In a bowl whisk together the oat flour, almond flour and baking soda. In another bowl beat together the melted butter/ oil with the sugar ad xylitol. Beat in the remainder of the ingredients not mentioned leaving out the chocolate chips.
  4. Pour wet mixture into the bowl of flours and baking soda. Mix well using a wooden spoon, stirring in the chocolate chips ( and whatever extra ingredients according to which cookie you’re making)!
  5. Roll mixture into balls and place on the tray. Press down using fork forming a cookie shape
  6. Bake in the oven until golden brown ( takes between 8-10 mins).
  7. Allow to cool, and store in an airtight container!
