Healthy Ice Cream

Creamy ice cream anyone?

One of my favourite weekly indulgences is a scoop of good quality gelato at my local gelato store. The weather lately has been extremely hot, and all i have been craving is some creamy ice cream to cool me down!

Vanilla bean

  • 2 cups canned coconut milk OR full cream milk
  • 1/2 cup vanilla protein powder
  • optional: If protein powder is not sweetened add 4-5 tbsp sweetener of choice (i like coconut sugar but if it is sweetened you may only need 1-2 tbsp sweetener)
  • pinch of salt
  • 1 tsp vanilla extract

Peanut butter fudge

  • 3 cups almond milk Or coconut milk
  • 0.5 cups peanut butter
  • 0.25 cups medjool dates blended OR chopped into pieces
  • pinch of salt
  • 1 tsp pure vanilla extract

Creamy Dark chocolate

  • 3 cups almond milk (1cup=250ml)
  • 1/3 cup cocoa powder
  • 1/2 cup nut butter of choice
  • 1/3 +2tbsp coconut sugar OR xylitol OR maple syrup
  • 1 tsp pure vanilla extract
  • pinch of salt
  • *Optional dark chocolate chips

Milk & Honey

  • 3 cups almond milk OR full cream milk
  • 1/2 cup raw honey
  • 1/4 cup +2 tbsp nut butter such as almond/cashew/macadamia
  • 1 tsp pure vanilla extract
  • pinch of salt

Toasted coconut

  • 3 cups full fat canned coconut milk
  • 2 tablespoons coconut oil
  • 1/2 cup toasted desiccated coconut (i toast mine in a pan)
  • 1 tsp vanilla

Mango

  • 1 cup blended mango
  • 2 cans coconut milk
  • 1/4 cup granulated sugar OR sticky sweetener
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  1. Place a loaf pan into the freezer.
  2. Place all ingredients in a high speed blender and blend all ingredients well. Pour the mixture into a pot and heat up to a medium heat on the stove top until sweetener has dissolved into the mixture.
  3. If you have an ice cream machine, pour mixture inside and follow manufacturers instructions.
  4. If you don’t, wait for mixture to cool then pour into loaf pan and place in freezer. To avoid it from becoming icy, mix your ice cream every 15 mins with a spoon for the first hour or so.
  5. If this is too tedious, pour cooled ice cream mixture into ice cube trays and freeze. Once frozen, blend the cubes into a smooth ice cream texture
