Healthy Poppy Seed Squares
Serving 1 piece: Calories: 132 | Carbohydrates: 6g | Protein: 3,5g | Fat: 10g
- 1 cup plain yoghurt (245g- i used non fat but any will work!)
- 1 cup desiccated coconut (100g)
- 1 cup oat flour (90g)
- 2 eggs OR chia eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 cup lemon juice
- zest of one lemon
- 1/4 cup oil of choice (i used avocado)
- 1 tsp vanilla extract
- 1/2-3/4 cup granulate monk fruit OR granulated sugar of choice
- 2/3 cups poppy seeds (103g)
MILK CHOC (around 137 cals)
- top each square with 2 choc chips
ZESTY LEMON (cals as is )
- add an extra zest from a lemon
CINNAMON APPLE (around 134 cals)
- replace lemon juice with apple juice
- Add 1 tsp of cinnamon to batter
VANILLA (cals as is)
- recipe as is
ORANGE (around 134 cals)
- replace lemon zest with zest of orange
- replace lemon juice with orange juice
WHITE CHOC (around 137 cals)
- top each square with 3 mini white choc chips
- Preheat oven to 180 degrees Celsius. Line a brownie OR loaf tin with oil/ baking paper
- Mix all ingredients in a bowl, and make sure everything is well combined.
- Pour batter into lined brownie tin.
- Bake for roughly 30-40 mins or until a skewer comes out clean
- Top with optional toppings and allow to cool
- Best stored in an airtight container
