Healthy Zucchini Muffins
These are absolutely delicious as an OTG snack or tea time treat! Great for taking to work or in your lunchbox!
- 2 cups oat flour
- 1/2 cup granulated sugar of choice (I used coconut)
- 1 mashed banana
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 cup grated zucchini
- 1/2 cup yoghurt of choice
- 4 tbsp oil of choice (I used avocado)
- 2 eggs
- 1 tsp pure vanilla
- Pinch of salt
CHOCOLATE CHIP (83 calories)
- Add 1/2 cup chocolate chips
ALMOND (70 calories)
- Top each muffin with one almond (i used 23 almonds)
CRANBERRY (67 calories)
- Add 28g dried cranberries
- Optional: Use strawberry yoghurt instead of plain
VANILLA (63 calories)
- Recipe as is
PINEAPPLE (67 calories)
- Add 1 cup diced pineapple
STRAWBERRY (65 calories)
- Add 1 cup diced strawberries
- Preheat oven to 180 degrees Celsius. Line a muffin pan with oil/ non-stick muffin cups.
- Combine all ingredients into a bowl for the ‘base’ recipe, then stir in added extras according to the flavour of choice
- Pour batter into the muffin tray, and top with extra toppings if desired
- Bake for roughly 10-15 mins or until a toothpick comes out clean!
