Healthy Zucchini Muffins

These are absolutely delicious as an OTG snack or tea time treat! Great for taking to work or in your lunchbox!

  • 2 cups oat flour
  • 1/2 cup granulated sugar of choice (I used coconut)
  • 1 mashed banana
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup grated zucchini
  • 1/2 cup yoghurt of choice
  • 4 tbsp oil of choice (I used avocado)
  • 2 eggs
  • 1 tsp pure vanilla
  • Pinch of salt

CHOCOLATE CHIP (83 calories)

  • Add 1/2 cup chocolate chips

ALMOND (70 calories)

  • Top each muffin with one almond (i used 23 almonds)

CRANBERRY (67 calories)

  • Add 28g dried cranberries
  • Optional: Use strawberry yoghurt instead of plain

VANILLA (63 calories)

  • Recipe as is

PINEAPPLE (67 calories)

  • Add 1 cup diced pineapple

STRAWBERRY (65 calories)

  • Add 1 cup diced strawberries
  1. Preheat oven to 180 degrees Celsius. Line a muffin pan with oil/ non-stick muffin cups.
  2. Combine all ingredients into a bowl for the ‘base’ recipe, then stir in added extras according to the flavour of choice
  3. Pour batter into the muffin tray, and top with extra toppings if desired
  4. Bake for roughly 10-15 mins or until a toothpick comes out clean!
