Low Calorie Vanilla Muffins

Serving 1 muffin: Calories: 40 | Carbohydrates: 8,2g | Protein: 0,7g | Fat: 0,8g

  • 2 cups spelt flour OR oat flour (181g)
  • 1 cup granulated monk fruit sweetener or any granulated sweetener of choice (176g)
  • 1 egg or flax egg if vegan
  • 1 tsp baking powder
  • 225 ml unsweetened almond milk OR milk of choice (for nut free)
  • 1 tsp pure vanilla extract
  • 2/3 cup low fat plain yoghurt (181g)

RUBY CHOC (around 42 cals)

  • Top each muffin off with one red chocolate chip

CHOC CHIP (around 50 cals)

  • top each muffin with around 5 chocolate chips

BLUEBERRY (around 43 cals)

  • Add 1 cup of blueberries to the batter

VANILLA (cals as is)

  • recipe as is

LEMON (cals as is)

  • Add zest of one lemon to the batter

PROTEIN FROSTING (around 54 cals)

  • make using one scoop protein powder
  • 3-5 tbsp almond milk (depending on your protein powder)
  • optional: stevia drops to sweeten
  1. Preheat oven to 180 degrees Celsius. Line a muffin pan with oil/ non-stick muffin cups.
  2. Combine all ingredients into a bowl for the ‘base’ recipe, then stir in added extras according to the flavour of choice
  3. Pour batter into the muffin tray ( around 2 tbsp of batter into each muffin cup), and top with extra toppings if desired
  4. Bake for roughly 20-25 mins until a toothpick comes out clean
