Protein Nut Butter Fudge

The best treat, packed with healthy fats to keep you full!

  • 2/3 cup nut butter of choice
  • 6 Tbsp pea protein powder
  • 1,5 cups desiccated coconut
  • 3-4 Tbsp honey OR pure maple syrup
  • 3 tbsp melted coconut oil OR cocoa butter
  • Pinch of salt
  • 1 tsp pure vanilla extract

CHOC-CHUNK

  • -Use peanut butter
  • -1/4-1/2 cup chocolate chips of choice
  • around 113 calories per serve

COCONUT

  • -Use almond butter
  • -Use vanilla pea protein powder
  • -Top with some toasted coconut
  • Around 107 calories per serve

PEANUT BUTTER

  • -Use peanut butter (i used natural crunchy!)
  • -Use vanilla pea protein powder
  • Around 104 calories

DOUBLE TROUBLE

  • -1/2 peanut butter recipe
  • -1/2 double chocolate recipe
  • Around 109 calories per serve

Salted pretzel

  • -Use almond butter OR cashew butter
  • -Use vanilla pea protein powder
  • -Top with 28g salted pretzels
  • Around 109 calories per serve

RAW CHOCOLATE

  • -Use chocolate pea protein powder
  • -Add 2 Tbsp raw cocoa and 1 Tbsp milk
  • -Add 1/4 -1/2 cup chocolate chips OR raw cocoa nibs
  • Around 113 calories per serve
  1. In a high speed blender or food processor blend the desiccated coconut and coconut oil until it forms a smooth texture. You may need to scrape down the sides with a spatula as needed. Depending on your equipment the time it takes will vary, but you are looking for a smooth nut butter consistency
  2. Once done, add all other ingredients except for chocolate chips/ any other toppings. Combine well in the food processor OR you can mix in a bowl with a wooden spoon.
  3. Once mixture has formed, stir in chocolate chips/ any other toppings
  4. Transfer mixture to a lined brownie tin/ loaf pan. Add toppings on-top
  5. Place in the freezer to allow it to firm up!
  6. Once firm, slice into squares and store into an airtight container in the freezer
Calories may vary according to brands used. I used pure maple syrup, 1/4 cup chocolate chips and 100% pure peanut butter, and pea protein isolate.
