Simple apple pie recipe

When I think of the word apple pie, my head starts to hurt as I start to think, “how to make apple pie crust?” or “how to make apple pie filling?”. Overall, it sounds like a very time consuming and tedious process and just doesn’t help when the sweet cravings kick in. This simple vegan apple pie mug cake recipe is perfect for when you want a delicious apple pie that will take you 60 seconds to make! This came right in time for when I was struggling with those PMS cravings and really felt like hot apple pie but just didn’t have the ingredients or energy to make it! Instead, I threw together these simple ingredients and the result was this extremely fudgy, decadent apple pie!

Now we all love a good old slice of apple pie that is perfectly buttery and crumbly. When I was still in college, I remember walking to the local McDonalds and getting a McDonalds apple pie. I would eat it and could never understand why after consuming one, two or maybe even three I would never be satiated. Only years later did I finally understand that the ingredients used in such an apple pie were mainly simple carbohydrates, loads of sugar that was messing up my hunger scale! McDonalds apple pie calories are around 240 calories and a whopping 17g sugar for that small square of apple pie. This vegan apple pie recipe has almost half the calories, and 1/4 of the sugar!

What are best apples for apple pie?

This recipe makes use of apple puree/ apple sauce which you can make yourself (by steaming and blending apples) or it can be store bought. My two personal favourite are to use granny smith apples to make a granny smith apple pie. It is a delicious apple that is not as sweet as normal varieties. If you prefer a sweeter apple pie then I also enjoy using honey crisp apples to make a honey crisp apple pie! But this being said, any store bought apple sauce will do the trick!

Microwavable mug cake

This mug cake recipe is perfect for if you’re looking to make a mug cake without an oven! All you have to do is cook the mug cake in the microwave for 60 seconds and you’ll be left with the best fudgy apple pie! If making a mug cake in the microwave is not for you, you can easily use your oven and bake it instead!

Vegan mug cake?

This mug cake has no egg, no milk and is totally vegan! It makes for a delicious vegan apple pie recipe. My fiancé absolutely hates it when I put egg in mug cakes, as he finds the flavour totally overwhelming! I concocted this easy recipe, and the result was a delicious mug cake that was totally vegan and didn’t need anything else

                                                                               Ingredients:

Apple puree/ apple sauce: You can make this yourself or you can get store bought. Both work just as well.

Oat flour: I make my own by blending oats in a high speed blender to make a flour consistency.

Peanut butter: This can be replaced by any nut/seed butter of choice

Dash of cinnamon: This makes the apple pie taste like a cinnamon roll

Granulated sweetener of choice (optional): If you prefer a sweeter apple pie, then feel free to add any sweetener of choice!

Extra apple slices as a topping (Optional): Add some freshly chopped apples, i like to dice mine into little cubes

Method:

 Grease a microwave safe bowl or mug of choice with some oil spray

Add all ingredients above and mix well.

Microwave for 1 minute, in 30 second intervals to prevent the mug cake from rising over.

Here are some optional variations to change up the flavour!

Coconut Apple pie: Add a sprinkle of desiccated coconut over your apple pie
Chocolate chip apple pie:Add 1 teaspoon chocolate chips of choice
Cranberry apple pie:Add 1 teaspoon cranberries of choice
Caramel apple pie:After cooked, add a drizzle of sugar-free caramel sauce of choice
Apple crumble pie: Add 1 teaspoon of home-made granola of choice on-top of your apple pie after cooking

  • Grease a microwave safe bowl or mug of choice with some oil spray
  • Add all ingredients above and mix well.

Oven mug cake

  • Preheat the oven to 180C/350F. Grease an oven proof bowl or mug of choice with some oil spray
  • Add all ingredients above and mix well.
  • Bake for 8-10 minutes until mug cake is done!
  • Top with optional apples sliced into cubes and extra cinnamon

Notes

You may add extra sweetener if you prefer a sweeter mug cake or if your apples are not very sweet
This mug cake is meant to have a fudgy texture, take care not to over cook.
For a gluten free mug cake make sure to use gluten free oat flour. You may replace the oat flour with almond flour if you prefer.
Do not make this mug cake in advance. Always make it fresh and eat in straight away for best results!

    Thank you for replying 🙂 Yes I was but just now I tried less apple puree and a bit more baking soda. It didn’t get as moist but didn’t rise either… It’s so strange! Can baking soda go bad?? I am now going to try even more baking soda now but stick to the same amount of the rest…

      Hmmm. Are you using baking soda or baking powder? I use baking powder in the recipe & have never tried baking soda! This may be the issue with why it’s not rising? 🙂 x

    I love your recipes. I made the basic apple pie mug cake from the video which says 1/4 tsp baking soda.
    it didn’t rise much at all. tasted good though.
    I looked at the written recipe and you have 1/4 tsp of baking powder listed.
