Peanut Butter and Jelly

The first time I ever had a proper peanut butter and jelly sandwich, Mik made it for me! Growing up, I would always have peanut butter and honey on my sandwiches and thought that peanut butter and jelly was only what people in cartoons would eat!

On our second date, Mik had taken us to a fancy restaurant that served food that you would see in an art gallery. Needless to say, we both came home starving and unsatisfied. Mik then proceeded to make me a slice of toast, with peanut butter and a big scoop of raspberry jelly. My life was changed from that day onwards, and it is still one of my favourite things to eat!

Peanut Butter Mug Cake

I have been pretty obsessed with making mug cake recipes ( Red velvet mug cake, apple pie mug cake) as of late for two main reasons. The first being mug cakes are just SO DARN EASY and quick to make. All you have to do is throw all the ingredients into a mug, mix it up, microwave it and you’re done!

Additionally, this mug cake recipe is extra special because it is just so ultra peanut buttery and has the most incredible texture. It tastes almost like having a soft baked cookie with an oozing jelly centre. Unlike traditonal versions, it is not filled with uneccessary added sugars!

Better than a peanut butter and jelly sandwich

A peanut butter and jelly sandwich takes approximately 1-2 minutes to make, and it is pretty darn good. Because this recipe will take you approximately 5 minutes to make, I had to justify for that extra time 😉 Now believe me when I say this, but it takes PB & J to a whole new level. Think soft, dense & rich peanut butter ‘cake’, with an oozing jelly centre. Every mouthful is delicious and I ended up having to make 3 of these mug cakes for Mik and his brothers!

I replace traditional jelly with mashed up raspberries and it adds such a delicious zing ( and fiber!).

Vegan apple pie mug cake recipe

                                                                               Ingredients:

Peanut butter: You can replace this with any nut/seed butter of choice

Oat flour: I make my own by blending oats in a high speed blender to make a flour consistency.

Egg white: Can be replaced with an additional 2 tbsp almond milk if desired

Milk of choice: I love almond milk

Granulated sweetener of choice : For that added sweetness sweetener of choice!

Raspberries or berries of choice: For that delicious fruity flavor

Baking Powder: Essential for the mug cake to rise

Method:

1.

 Grease a microwave safe bowl or mug of choice with some oil spray

 

Greased mug with oil spray

2.

Add all ingredients above( except for raspberries) and mix well. Smash your raspberries to form a jam and place it in the center of your mug cake

Microwave for 1 minute, in 30 second intervals to prevent the mug cake from rising over.

Additionally, Here are some optional variations to change up the flavour!

Toasted coconut: Add some toasted coconut as a topping
Chocolate chip:Add 1 teaspoon chocolate chips of choice
Almond butter & Jelly: Use almond butter instead of PB
Strawberry & PB:Replace raspberries with strawberries if preferred
Sunbutter & jelly: Use sunbutter or seed butter of choice if you’re looking for a nut free option

Ingredients
  

  • 2 tbsp Oat flour
  • 1 tbsp Peanut butter
  • 1 tbsp granulated or runny sweetener of choice
  • 1 egg white OR additional 2 tbsp almond milk
  • 2-3 tbsp almond milk or milk of choice
  • ¼ tsp baking powder

Filling

  • 3 tbsp raspberries (smashed)

Instructions
 

Microwavable mug cake

  • Grease a microwave safe bowl or mug of choice with some oil spray
  • Add all ingredients above (except for filling) and mix well.
  • Place raspberries in the middle of the batter of the mug cake
  • Microwave for 1-2 minutes (until mug cake is cooked through), in 30 second intervals to prevent the mug cake from rising over.

Oven mug cake

  • Preheat the oven to 180C/350F. Grease an oven proof bowl or mug of choice with some oil spray
  • Add all ingredients above (except for filling) and mix well.
  • Place raspberries in the middle of the batter of the mug cake
  • Bake for 8-10 minutes until mug cake is done!
