Cookie Dough Bites

I love cookie dough flavoured things! With my low carb chocolate cookie dough bread, plain cookie dough bites and cookie dough bars!
These protein cookie dough bites are like little crunchy bites of cookies and are chocolate coated. Yes the chocolate coating adds a little more calories, but honestly IT IS SO WORTH IT! There is nothing better than feeling the chocolate coating crack open, and chewing of soft vanilla cookie dough. I like to make these in bulk, and then store them in my freezer! They are also SO GOOD frozen, and almost melt in your mouth!

Chocolate Chip Cookie Dough

I have actually never met anyone that doesn’t like chocolate chips in their cookie dough! So if you’re one of these people, please let me know in the comments or in my DMs because I’d honestly LOVE to know!

Anyways, i’m getting side tracked here! So because these cookie dough bites have a chocolate shell, the recipe doesn’t have actual chocolate chips in the batter! BUT this being said, you are welcome to add some extra, but the batter itself is tastes like vanilla cookie dough.

The Ingredients

Vanilla pea protein powder- Pea protein powder yields the BEST results in terms of texture. Something super important is that you have to LIKE the taste of your protein powder as the cookie dough bites WILL taste like your protein powder

Low Fat plain yoghurt- Any low fat plain yoghurt works well! You could use flavored too, if you want to add extra flavor

Granulated sweetener of choice- I used erythritol

Oat flour- I make my own by blending oats in a high speed blender

Milk of choice- Any milk could work but I personally prefer using almond milk!

Chocolate of choice– I used plain milk chocolate

Method:

1.

In a mixing bowl combine all your ingredients.Slowly add water as needed. Scoop out your mixture and roll into balls.

Protein Cookie Dough Bites

These no bake protein cookie dough bites are the ultimate sweet treat! They are super quick and easy to make, and you don’t need an oven! All you need is a mixing bowl and fridge to place them to allow the chocolate to harden. These are meant to small and bite sized!

  • ½ cup vanilla pea protein powder (177g)
  • ¼ cup oat flour (26g)
  • ½ cup low fat yoghurt (122g)
  • ¼ cup water as needed
  • ¼ cup granulated sweetener of choice ( i used erythritol)

Coating

  • ½ cup chocolate (70g)
  1. Lina a cooke tray with some baking paper and set aside.

  2. In a mixing bowl, combine all your ingredients except for your water. Gradually add as much water as needed, to get a nice thick dough. Different protein powder brands require different amounts of water, so add slowly. You're looking for a cookie dough texture.

  3. Use a cookie scooper and scoop out 1/4 tsp size of the dough making it into small balls! If you're short on time, you can make larger cookie dough bites (1 tsp size) but you'll just get less per serving! The entire batch should make 6 equal servings, no matter what size you choose to make them.

  4. Using a double boiler or microwave, melt your chocolate. Dip your rolled balls into the chocolate or cover them using a spoon.

  5. Place in fridge until chocolate has hardened! Store in an airtight container in the fridge or freezer
