So we all know I LOVE my cheesecake recipes! With my chocolate cheesecake, vanilla cheesecake, pumpkin pie cheesecake the list honestly goes on and on. These are all cheesecakes that are not baked, and require setting in the fridge.

This recipe on the the other hand, is if you want a more ‘baked’ like texture. Look, in all honesty i’m not going to be unrealistic and tell you that this tastes EXACTLY like a New York cheesecake because it is slightly less creamy and rich. BUT, it absolutely tastes delicious! It has a subtle vanilla and lemon flavor, with a light texture that is so good!

Microwave Cheesecake Recipe

You can choose to make this in the microwave or in your oven. Honestly, if you can wait- I would recommend using the oven. Just because I find it gives a slightly smoother texture. But making it in the microwave is just as delicious, and be sure not to overcook your cheesecake.

I love how easy this recipes is to make, and it took a lot of taste testing so be sure to keep the measurements exact!

How To Make the Protein Cheesecake In A Mug

                                                                               Ingredients:

Smooth low fat cottage cheese: If you don’t have access to this, you could absolutely use low fat cream cheese.

Powdered granulated sweetener: I blend up my favourite granulated sweetener of choice (erythritol, stevia, monk fruit, xylitol) and blend it up until it is fine. 

Egg: Gives it that rich texture and flavor

Vanilla extract: To give it a subtle vanilla flavor

Lemon juice & zest : To give it a slightly tangy flavor

Method:

Add all ingredients above and mix well. Grease a microwave safe bowl or mug of choice with some oil spray

Microwave for 1 minute, in 30 second intervals to prevent the mug cake from rising over.

Add these toppings to change up the flavor!

Raspberry: Top with some fresh raspberries 
Blueberry:Top with some blueberries of choice
Cherry: Top with some fresh cherries
Plain vanilla: Omit the lemon juice and zest
Chocolate Chip: Add some chocolate chips as a topping

5 Minute Protein Cheesecake In a Mug

  • 1 cup Low fat smooth cottage cheese (OR cream cheese (250g))
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 2-4 tbsp powdered granulated sweetener of choice (Depends on how sweet you like it!)
  1. Line a ramekin or mug with non stick spray.

  2. Combine all ingredients in your mug/ramekin.

In the microwave

  1. Microwave at 30 second intervals ( to make sure cheesecake mixture doesn't bubble over for 3-4 minutes. Cheesecake should still have a slight jiggle in the middle

  2. Take out and allow to cool. Eat immediately (if you like it warm) or place in fridge to firm up.

In an Oven

  1. Bake at 180°C for 15-20 minutes until slightly golden at the top and jiggly on the inside.
