Since so many of you babe’s love making my zucchini brownie recipe, I thought that it only seemed fitting to make a mug cake similar!

If you haven’t mixed zucchini and chocolate together- then I don’t know what rock, you have been living under but you should get on it! Most people think that the zucchini will have a strong taste- but it actually yields this delicious fudge texture that is amazing.

Plus, you get added fibre and extra veggie boost just for eating your dessert which is always an added bonus!

Now we all know I have a whole array of mug cakes. My vegan cookie dough protein mug cake, apple crumble mug cake, 60 second chocolate cake or red velvet mug cakes are some of my personal favourites!

However, many people have asked for a chocolate vegan mug cake recipe, and while I have a delicious (molten lava chocolate cake) version in my You Can Beat Your Cravings Guide, here is a fudge zucchini version to give a try!

Looking for a single serving fuss free dessert that you can just make in a matter of minutes? This is honestly the best if you are craving a fudge brownie- but don’t feel like making an entire batch! I’m a huge fan of single serving desserts as they help me with portion control, make no big mess and are easy to prepare!

Microwavable Mug Cake

This recipe can be made by mixing ingredients in a oven proof mug, and then microwaved in 30 second intervals for 60 second until light and fluffy. It may depend on your oven, but mine comes out perfect at exactly 60 seconds, You may need to adjust your time accordingly

How To Make Zucchini Vegan Mug Cake in The Oven

If you don’t have a microwave – bake it in the oven! I actually prefer it oven baked as it yields a better texture!

To make your ve in the oven, simply follow the same instructions but bake it in the oven instead of microwaving it! I do it at 180 degrees celsius for 12-15 minutes until slightly under.

Vegan Mug Cake In The Air Fryer

This air fryer mug cake follows similar instructions to making it in the oven, but you place it in the air fryer at 180 degrees celsius for 12-15 mins!

How Do You Make The Chocolate Zucchini Vegan Mug Cake

                                                                               Ingredients:

Oat flour: I make my own by blending oats in a high speed blender to make a flour consistency.

Baking powder: Just a little to help it rise!

Cocoa powder: for that chocolate flavor!

Granulated sweetener of choice: I used a calorie free monk fruit sweetener, but any granulated sugar could work.

Zucchini:If this ingredient really freaks you out you can omit it

Apple sauce: For that fudgy texture and added sweetenedd

Chocolate chips : Use your favourite chocolate chips of choice (vegan if desired)

Milk of choice: I used almond

Method:

Grease a microwave safe bowl or mug of choice with some oil spray. Add all ingredients above and mix well

Microwave for 1-2 minutes, in 30 second intervals to prevent the mug cake from rising over.

Coconut choc: Add a quick sprinkle of dessicated coconut

Bonus choc chips: Top your mug cake off with extra chocolate chops

Ingredients
  

  • 1 tbsp oat flour
  • 1 tsp cocoa powder
  • 1 tbsp granulated sweetener of choice I used monk fruit
  • 1 tsp chocolate chips This is NOT optional
  • ¼ tsp baking powder
  • 1 tsp grated zucchini patted dry
  • 2 tbsp apple sauce
  • 2 tbsp milk of choice I used almond
  • 1 tsp vanilla extract

Instructions
 

  • Grease a microwave safe bowl or mug of choice with some oil spray. Add all ingredients above and combine well.

For Microwave

  • Microwave for 1-2 minutes in 30 second intervals. Middle should still be a little gooey.

For Oven

  • Bake in oven at 180 degrees celsius for 12-15 minutes. Middle should still be gooey
